The dish now known as Ratatouille is an ancient Mediterranean stew traditionally known as “Peasant’s Food,” since it is essentially comprised of any leftovers you can find thrown into a pot and cooked down together. Farmer’s food: fresh local vegetables, stewed in regional herbs, it can change with particular influences of the chef preparing it, and can vary every time you make it as well!

I paired this burger with my fabulous homemade gluten-free buns, but you could certainly eat it sans bun for a low-carb, but really filling meal option. You can also bake these puppies and freeze them for later, or even break them into crumbles for taco filling, put them on your salad, or use them as meatballs for your favorite gluten-free pasta dish! It’s really an impressively versatile (and super healthy) recipe!

This recipe could take a different form each time you make it, affording the opportunity to make it even more than once a week, if you like! Made without a pie crust (the flour settles to the bottom to form its own crust- bonus!), I can dump ingredients into the bowl, mix and bake or use a gluten-free pie crust, for a change of pace.
