Grilled Veggie Tacos

Grilled Veggie Tacos

I’ve borrowed the theme from one of my favorite college restaurants and made a deliciously healthy version of what they called the “Flyin’ Mayan:” a sweet potato and black bean burrito. I’ve grilled my sweet potatoes in thick slices much like steak fries. Adding black beans, corn, avocado and my yummy vegan slaw, all wrapped up in a soft, warm flour tortilla – it’s the perfect combination!

Healthier Latkes (hint: made with Spaghetti Squash!)

Gluten-Free Pad Thai

Gluten-Free Pad Thai

I view Pad Thai as the Thai version of leftover night, only unlike a typical leftover dinner, this is a dish everyone can get excited about. Open your refrigerator and start throwing in ingredients – literally, just toss them into the wok or large skillet and sauté until all the flavors aromatically permeate your house and call everyone to the meal. A great recipe + a yummy ingredient giveaway = a win-win!

Molasses-Chocolate-Fig Cookies

Molasses-Chocolate-Fig Cookies

This twist on the traditional will please all palates — chocolate lovers are placated by the chips that offer a sweet counterbalance to the molasses, and any kid loves a cookie rolled in sugar! The peanut butter-chocolate fans in my midst are thrilled with that option, and I love that the figs bring a moist, cake-like texture to these chewy cookies, and that they pair so well with the ginger and cinnamon. Could be a new family favorite!
