Every year I make a “Back-to-School” cake on the first day of school. My kids had already requested their favorite frosting — homemade marshmallow frosting — so I thought it was the perfect opportunity to invent a new cake that incorporated the frosting into the entire flavor profile instead of just topping it off.

Tweet 3 cups confectioner’s sugar 4 Tbs. butter or non-dairy substitute (e.g. Earth Balance® Buttery Sticks), at room temperature 1/2 cup sour cream (dairy or non-dairy) 2 tsp. gluten-free vanilla extract Cream ingredients together and spread over cooled cake.
