But if you’re one of those folks who shudders at the thought of making a gluten-free pie crust, I have great news for you: the latest “fashion” in pies is the “Rustic Crust,” which simply means that even for fruit pies, only one crust is necessary. No need to worry about rolling and transferring a top crust, which is what usually gives people the trouble. The end result is a home-style pie with a gorgeous free-formed crust that’s light and flaky, and totally un-fussy!

And don’t for a minute think that you can’t enjoy a custard pie because you avoid dairy; with this recipe, you have no such worries! Wonderful hot out of the oven, cold, or even room temperature, I recommend doubling the recipe, because one pie is never enough!
