In my quest for ever more ways to use pumpkin this season, I was intrigued by a reader recipe that was sent in calling for my Jules Cake Mix + pumpkin and very little else. After tweaking and experimenting with her recipe further, I’m proud to present to you what my household now affectionately calls, Pumpkin Gingerbread Cake! A perfectly quick, easy and low fat way to get your pumpkin fix this holiday season!

“Healthy” and “Cupcakes” are rarely used in the same sentence. Throw “Chocolate” in there too, and it’s a nearly unheard of connection! Unless you tell the kids, they’ll never have to know that these treats aren’t as decadent as they taste!

One of my favorite recipes to welcome warmer weather! Try these shortcakes plain with yogurt for breakfast; with ice cream and chocolate for dessert, or be a purist and pick some fresh berries this summer and smother it with yummy strawberries, blackberries, raspberries, boysenberries, strawberry-rubarb coulis … you get the picture? This recipe goes with everything!

Tres Leches Cake is served all over the world using different accent ingredients which range from rum to caramel, but always using 3 milks (hence the name!). What makes my version even more special are the coconut and almond accent flavors, and the fact that this cake is entirely gluten, dairy and egg-free. A vegan tres leches cake? You bet! And topped with homemade coconut whipped cream, it tastes like a dream!

I have made plenty of pineapple upside-down cakes, but I decided to mix it up a little this time by making some tasty, healthy gluten-free flours to add into my recipe, and also to bake them into individual ramekins for a pretty presentation. The result was such a super yummy recipe that a party of gluten enjoyers (i.e. – they didn’t know the cakes were gluten-free) fought over the last piece! In other words, you may want to double this recipe, if you intend to share!
