As we edge ever closer to Thanksgiving, many of our thoughts are turning to bread. All kinds of breads like dinner rolls and sandwich loaves for those Turkey-day leftovers, and of course, stuffing. None of us should feel deprived on Thanksgiving, no matter the dietary restriction, that’s why you need to try this bread!

What a wonderful way to get into the autumnal spirit — cranberries! I love this light bread as a sliced loaf or as muffins, with or without nuts. It is so simple and so universally pleasing. I hope you enjoy!

Warning: depending on how many helpers you have in the kitchen, they may end up slicing off and eating piece after piece of your bread…and not leave you enough for the croutons! As soon as I start to see cranberries in the market, I know that the holidays are coming! I suddenly find myself adding cranberries into recipes on a whim, and often find that their tart flavor and beautiful color add a zest to sometimes tired dishes. In this bread, I built upon this tart taste by adding orange as a complement, and – voilà! A healthy and flavorful quick bread perfect for winter mornings and dinner tables alike.

Follow the directions below to dry out the bread cubes before proceeding with the stuffing recipe. Modify any ingredients or spices that don’t suit your tastes and make this recipe your own.
