Particularly in 2011- the year the FDA finally moved forward to establish regulations setting standards for gluten-free food labeling – we should all take time to educate friends, family, restaurants, retailers, doctors, teachers … about celiac disease and the importance of truly gluten-free foods for those of us who live gluten-free. Oh, and let’s celebrate with a contest!!!

You don’t have to give up on dining out at restaurants — you can work with restaurant personnel before and during meals, and you may even enjoy safe fast food experiences when you know what to look for and consciously avoid cross-contamination.

Post Foods, LLC has declared that its reformulated Fruity and Cocoa Pebbles cereals are “certified” gluten-free. However, Post has not secured any independent certification for such claims. Because the FDA has not yet acted under the Food Allergen Labeling and Consumer Protection Act of 2004, consumers are left to wonder in cases like this, whether corporate claims of “Gluten-Free” mean that such products are safe for their families.
