I view Pad Thai as the Thai version of leftover night, only unlike a typical leftover dinner, this is a dish everyone can get excited about. Open your refrigerator and start throwing in ingredients – literally, just toss them into the wok or large skillet and sauté until all the flavors aromatically permeate your house and call everyone to the meal. A great recipe + a yummy ingredient giveaway = a win-win!

Short version: This is an out-of-this-world delicious, healthy and truly easy recipe for your next dinner!
Long version: Use what veggies you like and have on hand, and any protein you prefer: chicken, shrimp, tofu … you get the idea. My recipe calls for seafood, but feel free to substitute. Choose any color Quinoa, Sprouted Quinoa, or Kañiwa. Follow my basic directions and you’ll have a scrumptious, nutritious meal for your family in about 30 minutes!

Particularly in 2011- the year the FDA finally moved forward to establish regulations setting standards for gluten-free food labeling – we should all take time to educate friends, family, restaurants, retailers, doctors, teachers … about celiac disease and the importance of truly gluten-free foods for those of us who live gluten-free. The dish now known as Ratatouille is an ancient Mediterranean stew traditionally known as “Peasant’s Food,” since it is essentially comprised of any leftovers you can find thrown into a pot and cooked down together. Farmer’s food: fresh local vegetables, stewed in regional herbs, it can change with particular influences of the chef preparing it, and can vary every time you make it as well!

Light, not too sweet or sugary at all. Moist and perfect as-is, but oh my! With some summer berries, this could be even more divine. Oh, and it’s got some great dietary fiber, protein, minerals and B-vitamins too! I could be convinced to eat this for breakfast. Really.

I paired this burger with my fabulous homemade gluten-free buns, but you could certainly eat it sans bun for a low-carb, but really filling meal option. You can also bake these puppies and freeze them for later, or even break them into crumbles for taco filling, put them on your salad, or use them as meatballs for your favorite gluten-free pasta dish! It’s really an impressively versatile (and super healthy) recipe!

You might not want to tell your kids that the new bread recipe they’re loving is good for them. Or that it’s made with not only green vegetables (zucchini), but also green legumes (peas)!
