I’ll be honest. I’m not a huge chocolate fan, but it’s hard to get me away from peanut butter. In fact all nut butters: almond butter; cashew butter; even sunflower nut butter. I love the stuff. So, the idea of a peanut butter blondie version of a brownie was very intriguing for me.
And what better day to try it out than on National Peanut Butter Day (January 24th)? I can tell you I was not disappointed with this recipe. The only bad part was that I had to refrain from eating the whole pan because it had to be photographed! Seriously deliciously addicting!.
I’m sure this easy recipe would work with another nut butter, but on National Peanut Butter Day, I had to go with the peanuts! Enjoy celebrating!
But before I get to this mouth-wateringly delicious recipe, we have another way to celebrate National Peanut Butter Day: with a contest!
Two of my favorite gluten-free brands have teamed up with me to offer some totally peanutty-yummy gifts for 3 lucky winners!*
Each winner will receive 4 of each of these KIND peanut butter bars, plus 2 bags of their granola clusters!
KIND Peanut Butter & Strawberry, KIND Peanut Butter Dark Chocolate + Protein, KIND Peanut Butter Dark Chocolate Healthy Grains Bar, KIND Peanut Butter Healthy Grains Clusters.

✤The contest is now OVER. Congratulations to our 3 winners! Kallie Conrad, Patty Mavrogianis & Margaret Vargas!✤
*On occasion, brands may provide me with gluten-free products to sample and review. Regardless of whether products were provided or I have purchased them on my own to try, all opinions or reviews are my own, and I am not compensated in any way for hosting contests.
Peanut Butter Blondies
- 3/4 cup creamy peanut butter (Earth Balance® Natural Peanut Butter)
- 1/3 cup coconut oil (melted) or other vegetable oil
- 1 cup brown sugar or unrefined coconut palm sugar
- 1/2 cup milk, dairy or non-dairy
- 2 tsp. vanilla extract
- 1 1/4 cups Jules Gluten Free™ All Purpose Flour
- 1 1/2 teaspoon baking powder
- 2 KIND Bars, chopped (I used Peanut Butter-Dark Chocolate + Protein flavor)
Preheat oven to 350º F. Lightly oil an 8×8 baking dish and set aside.
In a large mixing bowl, combine peanut butter, oil and brown sugar. Once mixed, add in milk and vanilla extract. Slowly stir in Jules Flour and baking powder. While the mixture will be thick like dough, not like batter, it should hold together and not be crumbly.
Press gently into the bottom of the prepared baking dish. Chop 2 KIND granola bars and sprinkle over the dough, pressing any larger chunks gently into the top of the dough.
Bake for 20 to 25 minutes, or until the edges are just barely browning. Remove from oven to cool on a wire rack before cutting.
Makes approximately 25 blondies.
