Gluten-Free Belgian Waffles

As promised, I’m sharing my Belgian Waffle recipe using my new Jules Gluten Free™ Pancake and Waffle Mix! Of course, you can simply follow the directions on the bag for regular (but oh so delicious) waffles and pancakes, but if you’re looking for a light-as-air, fluffy Belgian-style waffle, this recipe is for you!
You’ll only need one of the two packets of mix contained in each bag of my Jules Pancake and Waffle Mix, so perhaps one weekend you’d like to conduct an extremely scientific experiment, and make both waffle recipes to see which your family prefers?! Either way, delicious waffles are back on the menu!
Belgian Waffles
- 1 packet Jules Gluten Free™ Pancake and Waffle Mix
- 3 eggs, separated (see my post for vegan options)
- 4 Tbs. vegetable oil of choice
- 1 ¼ cups milk, dairy or non-dairy (soy, almond or coconut)
Preheat waffle iron to medium heat setting.
Separate eggs and beat whites in a clean metal bowl with a whisk mixer attachment until soft peaks form. Set aside.
In a separate bowl, beat yolks and oil plus 1 cup milk of choice. Gradually stir in one packet (the bag contains two packets) Jules Gluten Free™ Pancake & Waffle Mix, adding the last ¼ cup milk as the mixture is thickening. Stir with a fork until lumps are gone. Gently fold in the beaten egg whites until smooth.
Scoop ½ – 2/3 cup of batter into preheated waffle iron. Spread with a silicone spatula to ensure the mixture is evenly distributed. Close the lid of the waffle iron and cook for 5 minutes. Open waffle iron cover and loosen the waffle, if necessary, with silicone spatula. Remove to a plate to serve or cool while cooking remaining waffles.
Yield: 7 Belgian Waffles

In the instructions you say to scoop 1/2-2/3 of batter into the waffle iron. Did you mean to say scoop 1/2-2/3 of a cup of batter? You don’t mention the word ‘cup’.
Just want to be sure what you meant.

Hi Sandy, for waffles from scratch, you could either use my pancake recipe on my blog or use my Belgian Waffle recipe from my first cookbook, Nearly Normal Cooking for Gluten-Free Eating.
