I may try the rum cake recipe using choc pudding and choc milk for the rum… his favorite flavor is chocolate and he wants a 3d cake – so i’m guessing the rum cake will be a more dense consistency.

Here’s my birthday cake recipe, but if you can’t do dairy and can’t find a dairy-free alternative, I’d recommend a different recipe. (Birthday Cake recipe: http://blog.julesglutenfree.com/2010/11/whitebirthday-cake/) Try this recipe instead, and rather than using rum, use apple or orange juice or any other liquid you think he’ll enjoy the taste of in the cake: http://blog.julesglutenfree.com/2010/12/holiday-rum-cake/. As for the milk powder in that bread recipe, if you can’t find one near you, substitute almond meal: http://blog.julesglutenfree.com/2011/07/make-your-own-almond-or-oatflour/!
