Thai Peanut Quinoa (& San-J Sauce Giveaway!)

Short version: This is an out-of-this-world delicious, healthy and truly easy recipe for your next dinner!
Long version: Use what veggies you like and have on hand, and any protein you prefer: chicken, shrimp, tofu … you get the idea. My recipe calls for seafood, but feel free to substitute. Choose any color Quinoa, Sprouted Quinoa, or Kañiwa. Follow my basic directions and you’ll have a scrumptious, nutritious meal for your family in about 30 minutes!

Healthier Zucchini Bread

Traditional zucchini bread has always seemed unnaturally high in oil to me, so early on, I worked to make a light, airy and not oily zucchini bread that I could enjoy without the guilt. I use fruit and sour cream (non-dairy) to compensate for the reduced fat and sugar, and the results are fantastic: moist, fluffy and crunchy on the top (my son’s favorite part!). I like to make this bread as mini-loaves or muffins so I can share the love with friends. They’ll want more, I promise!
