Homemade Cookie Dough Ice Cream (& Jules’ Ice Cream Social Contest!)

Back in what I call the Dark Ages of Living Gluten Free, finding palatable gluten-free, dairy-free substitutes for anything was darn near impossible. When I was diagnosed with celiac disease, I had to kiss one of my most-loved treats good-bye: raw cookie dough (shhh – don’t tell!). When I later learned I was lactose intolerant, I also had to give up my late night straight-from-the-carton-ice-cream eating hobby.
Doing without both of these things may have benefited my waist-line, but not my heart. It’s actually what drove me to create my own flour and write my own recipes! Necessity has always been the mother of invention!
So it was that years later I created the perfect gluten-free chocolate chip cookie, which fortunately or unfortunately meant that I had delectable doughy treats whenever I wanted them! I later fell in love with new coconut dairy-free ice cream options, so nothing could stop me! Gluten-free, dairy-free (yes, vegan!) Chocolate Chip Cookie Dough Ice Cream now threatens my hips once more, but boy is it making my mouth happy!
I’m so excited to share this super easy and too delicious recipe with you! I cheat and use my favorite So Delicious® Vanilla Coconut Ice Cream instead of making my own from scratch, but you could certainly make your own ice cream or homemade frozen yogurt. The key is in the amazingly yummy cookie dough – I use my Cookie Mix + Earth Balance® Buttery Sticks and Enjoy Life’s® new Mega Chunk dairy-free, soy-free chocolate chunks, and life is definitely good again!

Cookie Dough Ice Cream
- Jules Gluten-Free™ Cookie Mix
- 1/2 cup Earth Balance® Buttery Sticks*
- 1/2 cup Earth Balance® Shortening Sticks*
- 1 Tbs. Ener-G egg replacer, whisked into 4 Tbs. warm water
- 8-10 oz. chocolate chips or Enjoy Life Mega Chunks
- 1 ½ cups chopped pecans (optional)
- Ice cream of choice, dairy or non-dairy (Purely Decadent® Vanilla Bean Coconut Ice Cream and Organic So Delicious® Creamy Vanilla Soy Ice Cream are two of my favorite non-dairy options!)
*Earth Balance®’s new Coconut Spread is a great soy-free vegan alternative if you must also avoid soy in your diet!
Bring the Buttery Sticks and Shortening to room temperature, then beat together with half of the cookie mix until light and fluffy – several minutes. Mix in the egg replacer, until combined. Gradually stir remaining mix into the first mixture. Stir in chips and nuts, if so desired.
Spoon out small teaspoonfuls of dough and place on a plate or bowl, cover and freeze (they may be rounded or unshaped dough balls). Freeze until very cold (overnight is ideal). You’ll have more dough than you need so you get the bonus of making the rest of dough into cookies!!!
Pick your favorite ice cream or non-dairy ice cream; allow ice cream to thaw slightly so that it is easily stirred. Scoop frozen dough balls into the ice cream and mix to distribute. Return to freezer to set until ready to serve.

One of my best friends has declared herself a chocolate chip cookie expert, and that’s the way she likes them too. This is soo cool! Now I have the recipe you were talking about about twitter last week (and yes, I never got around to baking that batch of gf df graham crackers… all the raw vegan dough got used in soy-yogurt and soy-ice cream… and by the spoonful!)…. I’m going to have to try this way of making the cookies egg free and mixing into ice cream now! Ah, just what I needed to give a little more fun to ice cream days (Saturday and Sunday after lunch) here extra special! And I have a feeling that I’ll keep using this recipe through the winter, not just now at the end of summer!

Chef Froggie – I’ve only ever tried this recipe with Ener-G egg replacer (I find that’s the best egg sub for cookies) but that’s no reason not to try it with flaxseed meal + water. I love that egg sub. If you’re not baking any of the dough out, it will be perfectly fine; if you are baking some out, you’ll want to refrigerate or freeze the dough before baking to prevent spread.

Winning those awesome products would make my summer because, right now I am 39 weeks and 5 days pregnant, with my 4th child. I am only dilated to barely a 2 and haven’t had any real contractions. I “Liked” you on Facebook because not only do I love your cookie mix, but my non-gluten free friends love the cookies too (and don’t realize they are gluten free until they see me eating them too!).
I would love to win not only for your recipes, but because ice cream is a big weakness of mine and I’d get lots of use out of the bowls and spoons (not to mention trying out chocolate chip cookie dough ice cream for the first time since my celiac disease diagnosis).

I’ve been GF for going on six years…and I have five kids who request chocolate chip cookie dough ice cream for each birthday and I have happily scooped it for them and not even licked my finger!

Hey. I don’t face book, but I love your flour. Chocolate chip cookie dough is one of my all time favorites. I also have a serious weakness for ice cream and was thrilled to find the So Delicious Coconut milk ice cream. The best part about of the bowls would be with the home made ice cream because it is so soft, the insulation will help it stay cold longer.

Hi Jules! 7 months ago I found out I was allergic to 9 types of foods! One of them is gluten. Im 14. Its been so hard to eat for me because Im allergic to so many things. I just “liked” your FB page. Both of my kids were recently diagnosed with Celiac so I’m still finding my way and need all the resources I can get.
Those bowls are adorable! (Also, my son goes by Jules, which is short for Julian, so I always have a moment of confusion when I get your emails)

Janel – you can certainly use Spectrum Shortening. I find that the mixture of both the shortening and the butter (or Buttery Sticks) makes for a better consistency and flavor in the finished cookie, but if you’re just using it for cookie dough ice cream, you may not notice a difference at all. I’ve had a rough couple of weeks and an ice cream social just might be the ticket to perk me up!
I drove from South Carolina to Virginia on Aug 23rd to move my last child out of our nest to the Virginia Beach area for her freshman year of college at ODU. She drove her new car (a stick that she’s still getting used to) and followed me in the van loaded down with all her clothes and shoes….lots and lots of shoes! She’ll be living with my married son rather than in the dorms, and I like that I can visit two of my kids at once.
Well….we were on I 95 when my CDs started skipping like crazy and the road seemed a bit too bumpy…when we arrived in VA, we were told it was an Earthquake and to plan on extending my stay because Hurricane Irene was headed right for us!
We’d arrived two days early for college because my daughter had job interviews set up on campus and we’d decided to wait till we got to my sons to figure out what furniture etc she’d need for her room.
Her interviews were cancelled, all of Norfolk was evacuating, all of Hampton Roads was at Wal-Mart, Target, K-Mart, Lowes, and any other store we tried to shop in preparing their homes and businesses for the coming hurricane.
She wasn’t able to do much driving around in her car to get used to the heavy traffic and the routes to/from school because of evacuation traffic jams.
On Friday morning, my husband called me to say he was OK, but his car was not…it had just been totaled in an accident! Of course, within months of having it paid for!
On Saturday, Irene showed up. My son had to pull all the cars way up on his grass to the front of his house because with in an hour, the street was flooding and slowly his yard was disappearing into a lake. His neighbors went outside with a canoe and paddled it from the street to their backyard, around their house, and back out to the street!
Before the water reached the house, the rain finally let up and the waters receded! Then the wind kicked up! Lucky for us, any trees my son had that could have hit the house, were taken out by Nor’Easters from the previous winter! Others in his neighborhood were not so lucky and after the storm we saw many huge trees, roots and all, tipped over, some crashing into houses.
On Sunday morning, my husband called again. Our air conditioner gave up the ghost and it would be mega bucks to replace because the whole system was shot! You can’t live in South Carolina without AC!
I was planning to leave Monday morning for home, but decided to check the NCDOT website and saw too many road closures on I 95 and decided to give them an extra day to clear the roads. Thank goodness! On Monday, they had TORNADOS in North Carolina near the Virginia Border!
When I finally did leave for home on Tuesday, driving along Hi Way 58 in VA it was downed tree after downed tree, logging trucks and men with chain saws! Same thing on I 95 till I hit the outskirts of Fayetteville! I thought I was in lumberjack country! I also narrowly missed getting my windshield hit by a large branch that flew off the top of one of the logging trucks!
I did make it home safely though! Now I’m just waiting for a blizzard to hit and a swarm of locusts!

Oh my goodness, Kathleen! There have been so many comments coming in on this posting that I haven’t made it through them all, but wow! You REALLY have been through it! Girl, so glad you made it home safely!!!! I’m in MD and been joking that after the earthquake and Irene all in one week, that the locusts must be coming … but then I remembered we already had stinkbugs!

Oh Jules! There is SO much I could do with these bowls! Your cookie dough ice cream would be great in these for my daughters birthday party in Nov! Oh yes! The coconut milk would be awesome in my recipe I want to make in the bowls! We love the coconut chocolate milk and I have been wanting to try to make ice cream out of it! Forgot about all the other prizes, was so excited about the bowls and your cookie mixes! Just started using the Earth Balance and LOVE it. Does’t bother my pancreatitis and great for my daughters dairy issues. So Delicious is exactly what it’s name says! Was the first ice cream we tried that was dairy free and am now addicted. I have three children all with multiple allergies. Two of my children are girls and would love using the pink bowls! The cookie mix would be so helpful as my 3 children love cookies and I’ve currently been using your recipe from your book. A mix would be a lot quicker!
We use Earth balance buttery sticks for all our baking because of the children’s milk allergies. We’ve never tried so delicious ice cream, but love their yogurt!

I liked you on fb and look forward to gleaning as much information from you as possible as I am still very new to this whole gf thing after being diagnosed with celiac not too long ago. Then we found out my oldest son (age 8)also has celiac as well as allergies to peanuts, tree nuts and soy. I feel like I am learning to cook/bake (and not to mention grocery shop) all over again. And did I mention he also has asperger syndrome? Getting him to try new things is, shall we say, challenging. Either the texture is wrong or it “smells” funny. I am embracing this new challenge though and discovering that I actually enjoy trying new recipes if only to see the joy in my son’s eyes when he can take a bite of a chocolate cupcake or chocolate chip cookie and know that he is not going to get sick from it.
It would be awesome to win these bowls because, for starters, they’re PINK! As a mother of 3 boys I can tell you that there is absolutely no pink in my house! LOL Everyone loves to end a good meal with a great dessert so who wouldn’t love to end this summer with all these yummy treats?!!

I have said many times that I think ice cream is proof god loves us. It is simply divine! When I could not eat dairy, this is what I missed but I discovered coconut milk ice cream and it may be even better than the real thing! Hi Jules! 7 months ago I found out I was allergic to 9 types of foods! One of them is gluten. Im 14. Its been so hard to eat for me because Im allergic to so many things. Wow! My family and I have really gotten into making home made ice cream this summer so to be able to make cookie dough ice cream will be fun! I cannot wait to try this recipe out!
My Mom came and helped out for a week while I was recovering from surgery and the 1st day she was here she found my stash of your cookie mix and made a batch of cookies. She lives gluten free as well and could not BELIEVE how moist the cookies were! I sent her home with a few bags of the mix.

I liked your page on Facebook a while ago when my friend was diagnosed with Celiac Disease.
I have a small baking/chocolate business and she was so sad to think she would be missing out on all of my goodies now, so I did my research and have made her sweet tooth very happy! I love the recipes you have on your blog and I have grown very fascinated with baking GF that I make some sort of GF treat every week for my friend! If I win the bowls I am sure we would enjoy many study breaks aka movie nights (who is really going to use that college degree anyway?!

I’ve been a facebook fan for a long time now. I love your flour blend! In my family of 6, 4 of us have celiac disease (myself & my 3 daughters) so being able to make things gluten-free & delicious is something that I spend a lot of time on. Your most recent book (Free For All Cooking) has been a lifesaver to me, especially since my nephew has dairy, egg & soy allergies as well. I would absolutely LOVE these products so I can make some ice cream that I know won’t bother me. I have had horrible luck with ice cream these days making me sick. And while I scoop up 5 bowls of ice cream for the rest of my non gluten free family, I sit there with my packaged pudding or fruit! Having the real thing for once would be awesome! Especially cookie dough, which I haven’t had in years! I liked the Enjoy Life page since I have already liked Jules.

I liked your page because my mom found out we were all Celiac 3 years ago, and it has made us all feel better. My little brother was the worst though.. he doesnt speak or function at all for months if he has one gluten cracker. But is a healthy kid now that we are gluten free. My mom buys your flour and makes the best food for us, and it makes me happy to have my normal little brother back
