Berry Coulis

This recipe is a wonderful one to keep on hand as the extra something special to top Hot Fudge Pie, Healthy Chocolate Cake, Pancakes, oatmeal, cheesecake, ice cream … or really anything you want to make taste even more amazing!
Use any fresh or frozen berries, but raspberries, blackberries or strawberries work best. Strain through a fine sieve if you like your coulis super smooth, or leave some berries whole for texture – you choose!
- 2 cups fresh or frozen berries, rinsed
- 1/2 cup granulated sugar or coconut palm sugar
- 1 Tbs. lemon juice
In a 3 or 4-quart pan, combine berries and sugar, bringing to a boil over medium-high heat, then reducing heat to a simmer.
Stir gently for approximately 15 minutes, until berries begin to fall apart and the mixture thickens. Stir in the lemon juice. If desired, press through a fine strainer or sieve into a bowl, discarding any seeds and skins.
Whether served after straining or not, serve coulis warm as a topping to your favorite dessert or breakfast dish.
